The simple reason to your question is that Gate valve has a perpendicular travel and when it opens more than20% its allows nearly full flow to pass through it due to its minimum, restriction in flow. On the other hand a globe valve has rotating travel thereby allowing only that amount of flow according to opening.
According To Gate Valve Design ,It Is Not sensitive To Control Flow,The Varition Of Flow Due To Partial Close is higher than Globe Valve
